However Irish Food is changing somewhat as Ireland enjoys financial prosperity and the influence of new cultures.
Modern Irish cuisine really is an eclectic mix,as you will discover with the recipes from modern Irish chefs such as Darina Allen, Paul and Jeanne Rankin, Rachel Allen, Kevin Dundon, Richard Corrigan,Clodagh McKenna have been updating Irish ingredients with a global influence.
That is not to say however that they do not pay homage to traditional Irish recipes.
They certainly do! The difference is they keep it real.

A cooking programme on Ireland's premier t.v. broadcaster recently conducted a poll to find Ireland's most popular meal.

Like I said there is a lot more to Irish cuisine than those, I've got to say it,awful corned beef and cabbage recipes that seem to appear everywhere Irish food is mentioned.
Nothing wrong with the ingredients themselves but the methods used to cook them leave a lot to be desired.
